If you know me, you know I love coming up with healthy recipes. In general, I eat gluten-free, sugar-free and dairy-free (although I use grass-fed butter on these) so I created my own little twist based on some recipes I've found in the past. There isn't processed sugar in these. Also, if you don't use butter on top at the end, they could be dairy free as well. Here it is:
Ingredients:
-4 eggs
-4 tbsp coconut flour
-1/4 cup coconut milk or almond milk
-1 tsp. vanilla
-1/4 cup Lily's Chocolate Chips (or to taste)
-maple syrup
-oil to grease pan (I use avocado oil)
-butter (optional)
Instructions:
-Heat large pan
-Mix all the ingredients except chocolate chips and let sit for 5 minutes
-add chocolate chips
-grease pan with oil
-spoon pancakes into pan. Cook approximately 2-3 minutes on each side.
-top with butter and maple syrup!
